Peanut Butter and Jelly Ice Cream Pie

My husband said for last week “make something weird again.”  But maybe not as weird as avocado.

So I made this.  It’s an odd combination of flavors.  Actually not half bad though. Very low effort for a pie.

The “crust” is actually basically Rice Krispie Treat.

But with peanut butter. I made it all right in the pie tin for maximum laziness.

1/3 cup peanut butter
1/3 cup light corn syrup
2 cups Rice Krispies

Mix together, mash, form a crust.

Put this in the freezer for about 10 minutes or so so it firms up.

The rest of the ingredients are ice cream and jelly.  I decided that strawberry ice cream and jelly would go well together.  I thought that overall the pie would not be greater than the sum of its parts, but it turned out OK.  It’s pretty minimal effort for this one.

Put about 1/4 cup of jelly on the bottom of the crust. Then put ice cream over. As shown.

Fill the pie crust. Then put more jelly on top to garnish. Pie is as shown.

Weird! But not too weird. Not as weird as the last weird. And pretty tasty.
