Impossible Garden Veggie Pie

No desserts this week; instead, another quickie casserole disguised as pie. This time veggies only, since in addition to great fruit being in season, garden vegetables are too!

Garden veggies

Pictured:

2 cups chopped zucchini
1 cup chopped fresh tomato
1/2 cup onions (mine were leftovers and ‘pre-sweated’)
Parmesan Cheese (recipe takes 1/3 cup)

You can pretend these ingredients came from my lovely backyard home garden if you want, though, really, they’re from the grocery store.  I live in an apartment. Also in the background are the salt and pepper to be added later.

These are your filling ingredients.  Grease 10 inch pie plate, pour them in, and set oven to 400 degrees.

Bisquick Stuff

Pictured here –

1 1/2 cups milk
3/4 cup Bisquick
3 eggs
salt and pepper to taste

Mix well – some recipes say use the blender, but I find hand mixer to be just fine.

Then pour the wet stuff over top of the vegetable stuff like so.

Veggie batter

Bake 30-40 minutes until the pie is set.
