Lemon Blueberry Chess Pie

I bought too many blueberries! I should avoid doing that, but it’s hard to resist them when they’re so available.

I used a few up in this twist on a classic pie. What you need first is a 9-inch pie crust, unbaked. Add 1 cup blueberries to the bottom.

The filling consists of

3 eggs, beaten smooth
1 1/4 cup sugar
1/4 cup lemon juice
1 teaspoon lemon zest
3 tbsp melted butter
dash of salt

Filling mixed for lemon

Beat the eggs, then add in the rest.

Pour that in to the pie crust (berries will float a bit).

Bake the pie at 350 degrees for 40 minutes.

Complete. The flavors of lemon and berries go well together.
