Pizza – Spinach Artichoke Chicken

To make up for laziness last week, this is one of two posts for today.

This one describes a new home made pizza. Pizza dough made the usual way.

Last week at Jungle Jim’s Grocery I bought, among other things, this:

Artichoke Pesto

Looks interesting, right?  I mean other than the blurriness.  I really need a new camera.

It’s for dipping crackers but I wanted to see how it would do on a pizza.

So first I cooked up a few things: half a bag of frozen spinach, and some chopped up chicken breast, along with a diced red onion.

This is way too much chicken and onion!  I ended up making two pizzas. That’s OK – leftovers should keep just fine.

First a layer of pesto,

then the spinach, then onion and chicken

Cheese pizza

Then finally a layer of mozzarella cheese and some pizza seasonings.

Final result:

Pretty good stuff!  I love the look of the cheese on a home made pizza.
